Father’s Day Cakes
Simple orange and lemon cakes, perfect for the kids to make and decorate.
Serves: makes 36 mini or 12 large cakes

You will need
1 orange, peeled and pith removed, cut into segments – reserve any juice
Grated zest of 1 lemon
100g Sainsbury’s Fair-trade caster sugar
1 medium free-range egg, beaten
100ml Sainsbury’s buttermilk
50g unsalted butter, just melted
½ teaspoon baking powder
200g self-raising flour, sifted
Various decorating icing coloured tubes
1.Preheat the oven to 180°C, fan 170°C, gas 4 and line a mini-muffin tin with cases.
2.Finely chop the orange segments. Place the orange pieces and juice in a large bowl, then mix in all the remaining ingredients.
3.Spoon the mixture into the cases and bake in the oven for 15–20 minutes, or until risen and golden brown.
4.To decorate, stir the icing sugar with a little orange or lemon juice to a pouring consistency. Drizzle over the muffins and leave to set.
